Wash the lentils thoroughly. Chop the onion finely.
Sauté the onion in oil, then add the lentils and enough water to cover.

Once it's softened, scoop out a ladleful, blend it, and pour it back in to thicken (don't use flour).
Season with mustard and a little sweetener/vinegar.
