Preheat your oven to 180°C (350°F).
In a bowl, whisk the eggs, salt, and pepper. Get those arms working!
Dice the turkey ham and slice the spring onion. Easy peasy!
In a pan, sauté the onion and ham in olive oil for a few minutes.
Add the spinach and let it wilt.
Pour the egg mixture into the pan over all the ingredients.
Put it in the oven (if the pan allows) or transfer it to a baking dish.
Bake for about 15-20 minutes, until the egg is set.
