Preheat your oven to 350°F (180°C).
In a skillet, use half of the olive oil to sauté the diced onion and sliced mushrooms until softened. Kis Kukta says this is the best way!
Add the spinach and wilt it down, then season lightly with salt and pepper.
Whisk the eggs in a bowl.
Grease the baking pan with the remaining oil, add the veggies, and then pour the eggs over them.
Bake for 20-25 minutes, until the middle is set.
Let it cool before slicing.
