Turkey stroganoff with zucchini noodles – a low-carb, creamy dinner. How awesome is that?








1. Spiralize the zucchini or shred it thinly, then dry it with a kitchen towel – this will be your "pasta".
2. Cut the turkey breast fillet into strips, then season with salt and pepper. Easy peasy!
3. Heat 1 tablespoon of olive oil in a pan, then sauté the finely chopped onion and diced bell pepper for 3-4 minutes. We're cooking now!
4. Add the turkey strips and sauté over medium heat until cooked through (5-6 minutes).
5. Stir in the yogurt, reduce the heat, and gently simmer together, being careful not to let it separate.
6. In the remaining 1 tablespoon of olive oil, quickly sauté the zucchini for 2-3 minutes, just until softened but still crisp.
7. Serve the turkey-yogurt sauce with the zucchini "noodles."
8. Garnish with fresh parsley (optional).
