Place the meat, sweet potato, zucchini, and red onion on the baking sheet.
Drizzle with olive oil, sprinkle with dried oregano, salt, and pepper. Mix everything by hand to ensure the spiced oil coats everything nicely.
Spread the ingredients evenly so they bake properly, instead of steaming.
Bake for 30-35 minutes, until the chicken is cooked through and the sweet potatoes are soft. You got this!
