Add enough water to cover, then toss in the bay leaf and herbs.
Simmer over low heat for 20-25 minutes, or until the lentils are tender.
Season with salt and pepper, and add more water if needed.
Before serving, remove the bay leaf and sprinkle with fresh parsley. Enjoy!
