Season the cod with salt and pepper, and drizzle with lemon juice.
Place the fish in a baking sheet lined with parchment paper.
Chop the carrot and broccoli into smaller pieces, toss them with half of the olive oil, and place them next to the fish.
Bake at 180°C for 20 minutes.
Before serving, drizzle the remaining olive oil over the fish. Enjoy!
